Homemade ginger ice cream with candied ginger, sprinkle of nutmeg.

I started with the basic recipe from The Ultimate Ice Cream Cookbook by Bruce Weinstein, but modified it pretty drastically.

3/4 cup sugar
4 medium eggs

1 4 inch piece fresh ginger, peeled.
2 cup milk
2 cups heavy cream
1/2 vanilla bean
1 cinnamon stick
4 cardamom pods
1/4 whole nutmeg chunk
2 tablespoons finely chopped crystallized ginger

In a mixing bowl, beat the sugar into the eggs until thickened and pale yellow, set aside.

Slice the ginger into 1/2 inch pieces, combine with the vanilla bean, nutmeg chunk, cinnamon stick and cardamom pods with the milk. Bring to a boil, then remove from the heat, cover, and let steep for 15 minutes. Remove all the spices with a slotted spoon, and slowly beat the warm milk into the egg and sugar mixture. Pour the entire mixture back into the pan and place over a double boiler with boiling water. Add the spices back.

Stir constantly with a wooden spoon until the mixture just reaches 180 degrees.

Put into an ice bath, and then into the refrigerator overnight.

The next day, remove the spices with a slotted spoon. Whip the heavy cream until soft peaks appear, then fold into the custard gently. Pour into the ice cream maker.

Just before the ice cream is finished, add the chopped up crystallized ginger.

I serve with a bit of newly ground nutmeg and some additional crystallized ginger.

Cranberry Sorbet

•5 c. (1 1/2 lbs.) fresh or frozen cranberries, rinsed and any stems removed
•1 1/2 c. sugar
•1 1/2 c. water
•1/2 c. orange juice
•1/4 c. lemon juice
•2 Tbsp. Grand Marnier or other orange liqueur

Make a simple syrup by adding the sugar and water to pot and bringing to a boil. When the sugar has dissolved, add the cranberries and orange juice.

Continue to boil until the cranberries burst, about 10 to 15 minutes.
Let the mixture cool a bit, then puree in a food processor or blender (an immersion blender works very well here). Strain mixture through a sieve into a bowl.

Stir in the lemon juice and orange liqueur.

Place the bowl in the refrigerator and let completely cool.

When completely cool, freeze mixture in an ice cream maker according to the manufacturer's directions.
